Hobo Blues Bands renditions of JJF & Lil Red Rooster must be mentioned.
I also like their Shelter-rendition.
Devo's Satisfactions is great as is PJ Harvey & Björk's.
Tom Jones & New Model Army's Gimme Shelter is just unbelievably good.
If Gram's Wild Horses is a "cover" it might well be the best of any Stones-song, ever.

Another one I've thought of is Eric Burdon & The Animals' version of 'Connection'. They only performed it at the BBC (in '67) & my tape is a bit rough, but rumour has it that Jagger & Richards gave the song to Eric (confirmation anyone?).
