Mick Jagger is underrated as a rhythm guitar player
Fingerprint File.. Stop Breakin Down..
with Keith as one of the best rhythm guitarists ever, there hasn't been much room for Jagger to shine.. still he has a knack for it.

Have Mercy - proto-punk soul riffing. Keith? Brian? Both? Whenever I hear it,
I get a mental image of Keith's sunburst Epi Casino

I think Keith's peak period as a rhythm guitarist is from the times when he excelled the art - that is: from the times when there was another guitarist whose forte was playing fantastic lead guitar, so Keith put his creative energy into rhythm and riffs (as DandelionPowderman pointed out in the initial post those two go easily hand in hand).
I think especially on EXILE ON MAIN STREET one could find incredible, energetic rhythm guitar work from him, such as "Rocks Off", "Rip This Joint", "Tumbling Dice", "Happy", and especially "All Down The Line" and "Soul Survivor" . The biggest days of finding the novelties of open tuning were past by then, so he was able just to concentrate on just mastering the art - to play his heart out with those tunings, not yet showing any repitition or artistic lazyness but pure inspiration. What is also great and so typical Keith as a guitarist is that you can't really distinguish the greatness of the song from the greatness of his rhythm guitar work - they go hand in hand. So among other qualities EXILE has, greatest rock and roll rhythm guitar work ever captured on record.
What goes for live performances, he peaked as a rhythm player - with the same logic - during the 1972-1973 tours, when he laid an incredible rhythmic foundation and drive for the Stones songs there... "Brown Sugar", "Street Fighting Man", "Midnight Rambler", etc. etc. Outstanding power and passion and vitality in his playing.
It is funny to think that Keith is so well-known as a great rhythm player and a "riff master". I wonder if without those years when the guitar section in the band was so separated to the rhythm/lead roles - which seems to be a kind of sin to "weaving" idealogy, even "unstonesy"-thing in some circles - would that reputation of his being even possible without that era when he 'needed' to stick into those things and really make a difference there (around the same time when flashy lead guitarists more or less ruled the guitar world)?
