Mick in Performance springs immediately to mind.
Also consider David Bowie in The Man Who Fell to Earth; Art Garfunkel in Catch 22, and in Bad Timing.
Kris Kristofferson in Lone Star, Pat Garrett, and as a cameo in Alfredo Garcia.
Chuck Berry saying that he'd play for free in American Hot Wax is the ultimate pretence though.

Forgot Carnal Knowledge ! Drat.
Tom Waits is an excellent actor, be it Mr Nick in the Imaginarium of Dr Panassus, Down By Law, and Renfield in Dracula.
Also, speaking of Bowie: his cameo where he kills Carl Perkins in Into The Night is pretty good.
Other cameos: Leonard Cohen as the Interpol inspector in Miami Vice is good.
Johnny Cash makes a decent fist of being the tenacious sheriff in Murder In Coweta County. Ray Charles in The Blues Brothers is excellent too, and is far better than James Brown's Old Landmark.
Levon Helm in Coal Miner's Daughter is also excellent.

Garfunkel was fantastic in Carnal Knowledge.
