JumpingKent, A "Hammer-On" refers to a guitar technique. A string is first plucked, fingered or open. A fraction of a beat later, the guitarist will use a finger to "hammer on" a higher note, which is usually just a half- or whole-step higher on the music scale. DS

The woman is Kathy McGowan who co-hosted the show. The guy standing next to Mick Jagger with the big coat on was Andrew Oldham, the Stones' manager at the time. (this info from the youtube comments)
