If you allow me to pick one that was played on a semi-regular basis (a dozen times or so during the initial phase of the tour), it goes to One Hit (To The Body) from the Steel Wheels U.S. tour 1989. Quite exited to hear the song live at Pittsburg (my first Stones show) and then at Cincinnati. Pity they completely dropped it thereafter.

The thread theme is a contradiction. If a song is played only one tour, and none thereafter, it is usually not a "highlight". If you find a gem you just don't drop it.
Maybe the right word is "hidden treasure" or something, instead?
