According To The Rolling Stones is a great read. You get the gist of several lengthy interviews (around '02) with all four of them.
I don't know of any other book that has Charlie coming out of his shell that much. Plus it contains several essays from other notable musicians and their take on the Stones.

Also - I quite like the earlier books by Philip Norman and A E Hotchner. They have interviews with people who are now dead.
