Since its recorded in Open D ( or E, cant remember) you get that extra drone on the thinnest string that you wont get with Open G. I feel thats the clue.
To reproduce that sound on a capoed 4th in Open G you could add a seventh fret on the B string and a ninth fret on the (thin) E string. That would at least give a more chime´y sound.
Can´t remember I have seen him play it this way though

SFM should be a show staple. It is better than Start Me Up, Tumbling Dice, Miss You and Honky Tonk Women. A great show opener or closer. My favorite versions are from 1969 and 1973. I also like the Stripped version and the Voodoo Lounge versions were also good.
