Where to start? I know nothing about the genre, but I do dig the uptempo southern Baptist church type stuff.

Any recommendations? Any stones influences?

The Blind Boys of Alabama - Spirit of the Century (2001)
Guests include Charlie Musselwhite, John Hammond, David Lindley, Danny Thompson, and George Scott.
They do a great cover of the Stones' Just Wanna See His Face. They also cover Tom Waits and Ben Harper. The album rocks, but it is not a cheap update of their traditional gospel.

I second Goodbye, Babylon. Bob Dylan gave that set to Neil Young for his birthday or Christmas. Something like that. Or did Neil Young give it to Bob Dylan? I don't remember what I read.

The Gospel According To Spinal Tap, although the review wasn't too good:

This pretentious ponderous collection of religious rock psalms is enough to prompt the question: What Day did the Lord create Spinal Tap and couldn't he have rested on that day, too?

Still better than the review for Shark Sandwich: Shit Sandwich smiling smiley

Little Richard's "Pray Along With Little Richard Vol. 1 & 2" (1960) are two of his best albums and fantastic, southern gospel albums featuring authentic recordings of the music he grew up with. Interestingly Richard is not using his shouting Rock & Roll style voice, but sings in a full baritone.

Say Amen, Somebody is an excellent documentary on Gospel. I saw it on PBS years ago. It is streaming on the Criterion channel. I'm going to watch it again. It has been released on DVD. I'm not sure about the other options for watching it.

Sister Rosetta Tharpe - How did we get this far without mentioning her? You have to check out her music. She's an amazing guitarist and considered one of the pioneers of rock 'n roll. Her electric guitar had a big impact. Chuck Berry was influenced by her. I believe Elvis Presley also mentioned her. Little Richard might have acknowledged her, but I'm not sure. I think Keith Richards has mentioned her. You could get a comp of her hits or listen to tracks online to decide. There is a documentary on youtube.

Mahalia Jackson is another we should have mentioned by now. You definitely want to check her out, especially if you have an interest in blues and jazz vocalists.She had an influence on soul music. She had a big impact on Mavis Staples and Aretha Franklin. I believe she is in the rock 'n roll hall of fame. I have a couple of her comps.
