Been working myself through a large pan of minestrone the last few days, which is ideal after work with a no-cook-wive. It's healthy, nutritious and the taste gets better each day (up to a certain point that is..). I always throw in the rind of my parmesan cheese, which deepens the flavor (Italian trick). Even the kid loves it.

Sorry I meant Black pudding! The dark bread is the typical Fazer "efterugnsbröd" and the much lighter, very very tasty bread from Hämmenlinna. Mmm.

Liddas, just curious, what did you do with de 'cima di rapa' (raapsteeltjes) along with the orechiette? Just those two ingredients looks a bit spartan to me...

Very easy to do and delicious!

Cook the orecchiette in the same water with the "cime" (chopped to pieces, not too small), a couple of peppers (peperoncini) and a little garlic. Once ready, add olive oil, a generous amount of "ricotta salata" (don't ask me to translate that in English! A sort of salted sheep cheese) and ready to go!

How would you do 'koteletten' making sure they remain somewhat moist and not overcooked to white?

I think I would leave them at the butcher's for that effect. Dutch meat dishes are a pain.

Thanks liddas, if that's as tasteful as it's fast & easy it's going to belong to my repertoire. I just love those pasta dishes. Actually, as the only cook in the house, they've kept me from getting overworked.

Limbo, I've never done koteletten and will NEVER do 'em. Keep them in the freezer to assault a burgler if you have one, I'd day. Duth meat - a pain indeed. However... I couldn't live without 'boerenkool met rookworst' - probably the best thing in dutch cuisine. Apart from maatjesharing that is...

If it's hutspot, maatjesharing, frietje speciaal, or Chinees-Indies (which is dutch really, by now) it's alright with me.

The rest they can scrap. The list above by the way tells something about the quality of Dutch kitchen. It's all fast food.

I think I'll have another steak'n'kidney pie my friend brought over from Tunbridge Wells again today. (salivating already)

Actually, I think all dutch 'stamppotten' (hodgpodges) are great, whether it's boerenkool, zuurkool (though the way the Alsatians make it is great too) or hutspot. And somehow they're so fitting to our landscape, those long stretches of ploughed land, some sort of culinary equivalent to it. Ah, images of Van Gogh..

Still looking forward to my last bit of minestrone though!

I had some bread with salmon and stuff.
The salmon expires in a few days, but I couldnt throw it, its from the Norwegian fjords.. It didnt taste bad, but now one hour later, Im starting to get a bad taste in my mouth.
