The situation with CD1 is a bit more complex. It seems that they utilized 2016 mono versions for many tracks. I am not sure about stereo, need to dig a bit more. It is quite possible they used versions that were prepared for 50th anniversary editions of TMSR, BB, LIB and related singles.
No, both ABKCO and London (West German) CDs 12x5 from early/mid 80's are all mono.Quote

It's been quite a long while since I last listened to 40 Licks, though I do recollect that it contained a quite nice stereo-mix of It's All Over Now. I no-longer have this compilation in my current collection, and the only version of this song I normally listen to now, is the mono-mix from the Singles Collection. I don't recall whether the 1980's CD of 12x5 features the track in mono or stereo.

However, It's All Over Now is in stereo on 12x5 SACD-hibryd CD from 2002. Also it is present on:
More Hot Rocks 1 [London 820 515-2], West Germany and [London P25L 25049] or [London POCD 1929], Japan
Big Hits (High Tide and Green Grass), UK version. [London P33L 25016], [London P25L 25039] and [London POCD 1919], Japan only.

The point is that it is hard to compare tracks in HD with tracks in 44kHz/16bit CDDA format using audacity or similar software. It is necessary to put everything on the same page. Or to trust your earsQuote

Don't know if this helps, but on Apple music I read

Shelter - Nothing
Satisfaction - Mono Version
Last Time - Mono Version
JJF - Mono Version
You Can't - Nothing
19th / Thumb / Fade Away / Shadow - Mono Version
Devil / Mother's Little Helper - Nothing
Rainbow - full version with intro
Cloud - Mono Version
Horses / Ruby / Paint it Black - Nothing
HTW - Mono Version
It's All Over Now - Mono Version (although it sounds if it is the stereo version)
Night Together - Nothing

I listened but I thought it was my pc ram or ethernet connection...
Dont think the vinyl had that issue.
