Something the Who used to do to great effect was the "false ending". About halfway throught the set, they'd do a few numbers from Tommy or Quadrophenia that would have the crowd so delirious they could have walked off right then and there, after only an hour or so, and no one would have complained. Then they'd do another hour and a half that the crowd, already feeling well-satisfied, would consider to be "gravy".
The Stones could do something similar by playing Satisfaction, Brown Sugar, JJFlash, etc. at the halfway mark in their show. Anything they did after that would seem like "bonus" material.
