I agree with you 100%. Bill Wyman (along with so many others) was an integral part of creating the sound that made this band who they are to this day.

-The entrance of Nicky's piano in No Expectations.
-Absolutely everything about the bridge in Monkey Man.
-When Charlie kicks up the drums in Midnight Rambler.
-The intro to Gimme Shelter.
-Bill's bass in Hand of Fate.
-Every little lick Ronnie plays when they do Wild Horses, at least on this last tour. They just kill me. I don't know why.

-This run Ronnie does in the original take of Yellow Cab from about 3:55-4:25.

Damn I had forgot just how good that one was. Thanks for the reminder!

Sweet details I particularly love:

The falsetto B/G vocal "melody" at 3:10
When the harmony vocals come in at 0:21
The organ lines throughout

Have they ever played this one live? That would be a real treat and a nice nod to Billy Preston. Maybe a bit too laid back but what a nice break between some of the more up tempo tunes.

peace

My single favorite Stones moment: Brian's mellotron solo at the end of "We Love You."

Gotta have some of the goofy moments as well, which are great:

Keith's key slippage during a solo in SFTD Miami 1994

Ronnie hitting harmonics during the solo in Miss You Atlantic City 1989 with Mick looking at Keith with a WTF? face

Ronnie looking completely lost during Mixed Emotions, Pittsburgh 1989 broadcast on the MTV Awards

She's So Cold - Wembley, 1982

The entire band getting lost in Street Fighting Man, Giants Stadium 1994

The laugh in How Can I Stop

The missing of the first part of the bridge in Whip from LIVE IN TEXAS

The ending of LSTNT from Hampton that somehow disappeared on STILL LIFE

DIRTY WORK

The guitar riff during the bridge of Soul Survivor
The Organ in She Smiled Sweetly
Mick's falsetto vocal in the middle of "Ain't No Use In Crying"
The bass riff in 2000 Light Years From Home
"Yeahhhh WHOOOOOOOOOOOO" Jagger on Stray Cat Blues
The lyrics of the song Some Girls
Mick Taylor's Sway solo
The last 40 seconds of Midnight Rambler on GYYYO
