Holy smokes. I've loved foie gras since I was a child---never knew it could be duck liver--thought it was only GOOSE! Astonishing what can be learned on iorr.
As you might know swiss, California has banned foie gras since 2012, based on the forced corn feeding necessary to enlarge the livers being determined to be cruel to the ducks and geese.
