The Stones could make a cool album of gospel covers. A lot of the sounds suit them and their style of playing.

About the only bit of the Keith/Marsha Hansen collaboration that shows up on YouTube:





A bit of a mixed bag, that one - worth getting for the tracks with Keith and friends, which are pretty good - but around half the album is Marsha Hansen solo with just piano accompaniment, which may or may not appeal to you. The CD is by way of illustration to the book it comes with.

I don't know that there is only one complete answer to this, but in discussing the origins of what became the two styles, I'm pretty sure it had more to do with the lyrics than the instrumentation. To some extent, both styles had origins in work chants of field workers (slaves). Modify and add sacred lyrics and you got one part of the origins of gospel music. Modify and add secular lyrics and you got a major part of what became "the Blues".

I know it's not quite as simple as that, but that's a good place to start thinking about it.
