lotsa good competition but I'll have to go with the piano track off of Dirty Work.
It's more of a 'relief' thing knowing the album is finally over (not that it's getting a lot of spins in this household).

Alternatively, he could just play guitar. Lord knows he's had 7 years since the last new Stones album to release however much 'solo' material he wants.

Excellent question / thread. One of the Stones' undisputed strengths is their tradition of fantastic closing tracks to their albums. From their first album's closer (Walking the Dog) and throughout their glory years it seemed every album closed with something special...(OK, Satanic Majesties' "On With The Show" could be counted as an exception...much better to have closed with "2000 Light Years From Home", no?). Even later albums like Steel Wheels and Bridges to Babylon close with fantastic tunes (2 of Keef's best, in fact), but in my opinion the greatest album-closing song of all time on any Rock album (tied with the Who's "Won't Get Fooled Again" and the Beatles "A Day In The Life" ) is "You Can't Always Get What You Want".
