There is actually a good bit of guitar on Emotional Rescue; got mixed down. There's your reason we've not seen it live yet.
Good question. I really can not come up with one.
"Continental Drift" has the credit of Keith on acoustic guitar. I can see it maybe being more of an effect he is doing with the guitar; or something percussive.

I thought "Can You Hear the Music" on GHS, but there is a distorted guitar of MT in the middle part, if I remember correctly.

The opening riff is a guitar - through a Leslie at that.

Yes, but it is "almost lost in the track's unintended complexity. Mick Taylor contributes the main guitar lines." (Martin Elliott: The Rolling Stones. Complete Recording Sessions 1962-2002, London 2002, p. 203).

Keith: "I had forgotten how hauntingly nice that is. We did it in two takes and I played bass, organ, guitar, and piano on it. Charlie played drums and Mick sang it. It was just the three of us. And suddenly that came back to me (while we've been rehearsing it) and I saw us in the studio."

There's no guitar on it though. Mick has said Jack played the piano, doubt Keith played the hammond himself I reckon both Keith and Brian played it at same time.

Given that Brain played organ when they played the song on TV in 1967 maybe he actually played it on the studio version too.

His memory is sometimes off, Mick said in 1967 that Jack played piano. So in Keith's visual memory 40 or so years later he forgot about someone, perhaps he forget about others there and playing too.
