Probably done using the relatively new audio separation software tools like Demix Pro that are able to extract instruments and voices from a stereo or mono source so that you can create a new stereo mix... In the hands of the right people, the results can be excellent a far superior to the source tape, but in the hands of idiots, well...

how sensitive is this software?
could it for instance extract individual instruments from a audience recording?
for example putting together all the sources we have for the second show in oakland in 1969
could it extract enough instruments to assemble a stereo mix of gimme shelter?
