In English, the expression/saying "to bore the daylights out of someone" means that the thing that is making that person bored is making him/her totally, extremely, utterly bored.
You could say of an extremely long and aimless guitar or drum solo that they are boring the daylights out of you. Or you could say that about a person whose only interest is the Rolling Stones and has no other topic of conversation than them.
Keith is just playing with the phrase, (whose literal interptretation would not occur to most native English speaker), by using sunshine as the subject of the excruciating boredom. In contrast to his merry nocturnal pursuits and moonlight capers.
Think Vampire. Then think Daylight.
