I once dated a woman that grew up in Surrey, UK
and her's was the only Shepherd's Pie I ever tasted.
From what I remember, I am thinking that a dash of
this stuff might be a good addition to the recipe:

Beast you are so right. No Englishman (or woman) worth his/her salt would add condensed soup to cottage or shepherd's pie!

Got to have the Lea & Perrins Worcestshire Sauce 'tho and peas on the side!

Now here's the question of the day....... how to pronounce "Worcestshire"? Ha!

ahem: note that the recipe Keith proposes as his version has a can of soup in it -
so there's another theory shot to hell, eh? :E
meanwhile, the cream of celery trick came from an Irish woman, so ... so i think i'll step outside.

I quick trick for the pie is after adding onions, celery, carrots, etc to the browned mince add a dusting of flour, cook for another min or so, then deglaze with a bit of dry red wine(bordeaux is perfect) and a bit of beef stock. Bring to a boil and you've a nice gravy.

The original purpose of Shepherds/Cottage Pie was to use up the leftovers from the Sunday joint - so making it from scratch with raw mince is sort of cheating, although very nice. Use the remains of a beef joint, minced, plus any gravy or pan drippings you've got left over, plus extra beef stock to make the whole thing nice and moist. Definitely no cheese on top for a classic Pie. This is one of those dishes that everybody wants Like Mother Used To Make - and everybody's mum had her own method and secret ingredients.

By the way, it isn't a Cow Pie because to anybody born in the British Isles, THIS is a Cow Pie!

Very nice, thanks for posting this very charming pic. Actually, he does cook. Before the girls left home in CT, for their NT appartments, he cooked breakfast for them. Every day, before school, dad made breakfast. That's so sweet, and nice - and such a loving thing to do.

... smile: when i look at that answer, it says both. it's HP he's always got around -
but perhaps that's just a decoy to keep the world Daddy's supplies from drying up. :E

i thought that was one of the defining characteristics.
i know some people also put them in the filling, but i don't think i've ever seen
a shepherd's/cottage pie without potatoes on top. unless someone had eaten them off, of course :E
