steve earle - one of my all time fave singer/songwriters/pickers...
g. harrison if nobody anted him in along with the other two..
brad paisley
vince gill;
and a whole lot of amazing country and americana type players who can seriously play while they sing...

He did that more in the 80s (Hungry Heart comes to mind) than today. My opinion is that he's vastly improved as a guitar player since the early days (mid 70s). If you've got it, flaunt it, I suppose.

James Hetfield and Bruce Spinsgteen
It's amaziong how many complex riffs James can play while singing at the same time, usually diferent melodies for both voice and guitar and at times with a diferent tempo, yet he puls if off without even looking and making it seem like it's the easiest thing in the world.

Keith,your right about Hetfield. Don't know how I forgot about him,but he does all the singing for Metallica and sings pretty good for a heavy metal sound. While playing solid rhythm guitar.
