Cheese? Wow, I think you might be confusing him with some other alto sax smoothies from the 1980s. Listen to the band on Bowie's "David Live" (1974) and tell me where you hear cheese from Sanborn. His rock chops are different than, but right up there with, Bobby Keys'.
