It is true that Shepherd's Pie is supposed to be made with lamb, but according to my extensive research on the subject several years ago, Keith Richards Shepherd's Pie is made with chopped meat, meaning hamburger (ground beef).

Furthermore, the Keith Richard's Shepherd's Pie I researched did not have tomatoes, Worcestershire, Cheddar Cheese, or even garlic in it.

These are the ingredients:
3 pounds potatoes
1 tablespoon butter
Salt and pepper to taste
2 pounds ground beef
2 large onions, chopped
2 large carrots, grated
1 12-ounce can beef stock
1 tablespoon cornstarch

That's an absolutely basic shepherd's pie recipe, the one I (and I assume Keith) grew up with. As a kid I couldn't imagine it having any other ingredients in it! Ours was always made with ground beef (minced beef), too, though I guess it's logical that shepherds would use lamb. (Side note, every time this dish is mentioned, I can't believe how many different spellings pop up! And that's without considering the apostrophe. How many shepherds? Is it shepherd's pie or shepherds' pie? grinning smiley )

This is Keith's recipe:

KEITH RICHARD'S FAMOUS SHEPHERD'S PIE RECIPE

Here it is, a recipe for shepherd's pie from that well-known gourmet, Rolling Stones guitarist Keith Richards.

Shepherd's Pie

3 pounds potatoes, "Tumbling Diced"

1 tablespoon butter

Salt and pepper to taste

2 pounds ground beef

2 large onions, chopped

2 large carrots, grated

1 12-ounce can beef stock

1 tablespoon cornstarch

Place potatoes in large saucepan; cover with water. Bring to boil, reduce heat, simmer until tender. Drain. Using electric mixer or whisk, mash potatoes and butter. Season with salt and pepper. Set aside.
Heat large skillet. Add beef and onions. Season with salt and pepper. Add carrots and stock. Mix in cornstarch, cook 10 minutes. Pour meat mixture into pie dish and top with mashed potatoes. Place under broiler until potatoes begin to turn brown.

PS! A note from Keith's friend!

«Don't forget a huge amount of HP Sauce! Add an extra onion, in which Keith usually cooks on the side – for quite a long time, with a touch of sugar/caramel in it. Sometimes, he adds some scallions in the mashed potatoes as well».

This is how it turned out the first time I made it smiling smiley

True: I am married to an Englisman who cooks, gave him recipe from Keefspie, he made it last night but w/ hamburger
(HP sauce always in this US fridge for him already)

and I kept thinking about the story of Keith making Shep. pie
and setting down the onions (scallions?) and someone took them,
he was crazed/ funny
so last nights pie based off what's posted on Keefpie...
ah...

To be more precise: a Sheperds' Pie is made with minced mutton, not lamb.

Anyways, it's bland.

I use the dried tofu mince, and I'm not all the way sure I'd risk serving it to Keith,
but it's a huge hit with the people around me whenever I make it. Gardeners' Pie I guess we'd need to call it?

I agree with all the remarks above about the keefpie.com recipe: It's different from Keith's previous recipes.
You won't need a whole kilo of potatoes, but you certainly would need more boiling time
and more milk and butter than listed (which goes for Keith's previous versions as well).
Tomatoes and cheese are alien to this dish ... but I'll definitely try that Extra Onion Secret next time :E
