A source of renewable energy tilts this part of boxing match with an elegant ion mot; we are changing the lights to a state of darkness with a seemingly contradictory adjective-noun pair.

Is this some specific Jeffrey that's likely to be familiar to people in the UK or US or Oz or wherever?
How much is in a coconut besides milk, meat and air? I don't remember any Stones songs where they talk with any of those 8\

Well, I'm afraid I can't tell you about Jeffrey without making it a dead giveaway (although I'd think you'd remember the Stones' brief association with Jeffrey (I'm sorry, that was too cryptic))... but I can tell you this:

There are three songs referenced in this clue, and the first two are both 60s songs (and includes a Stones one) and the third is a 1972 song.

Jeffrey was the name of Freddy Sesslers son, perhaps that is the Jeffrey referred to here.

On Nelson's Column (half-/full-nelson being a wrestling move, therefore monument to wrestling)

well, crud... there's some conflicting lyrics for the last line... I thought it was "but all I do is talk with the lime" ("Lime in the Coconut" by Harry Nillsson) but now it seems it's probably "but all I do is talk to the lions"... not that getting that right would've made it easier.
