I was listening to this today and i forgot how lively and rockin this version is of iorr
The piano and the build up to the end its just off the chart, Keith's back up vocals and Chuck Berry licks, Micks passioned vocal attack, i just remembered how much i like this song today
Boy would i love them to play it like that again live
My question is why does it sound so uninspiring these days. What's missing

The modern version is one of the war horses that I still enjoy live.
I'll take it live over "Tumbling Dice" or "Miss You" any day.

Because they play it like shit!
I recall reading somewhere that Keith alluded to the change of key because it was "better" and it's really more to do with making it a Stones song, which it isn't on IORR.

The SNL version with Mick and Foo Fighters is the best one since 1997 or so.
Sadly they play the same versions of the same songs over and over again, no change on the arrangments, no medley of 2 or 3 warhorses, it's always the same 6-8 minutes versions of the same songs.

Because they get old? Because a 70+-year old cannot sing anymore like he could in his mid-30's?
Recently I listeend to Mindnight rambler from Saitama 2006 which some people regard as the best Version of the song. Come on, it can't be compared to some good Version of the easrly '70s not because of the guitar playiing but because Mr Jagger due to his age is no more in that easy command of his voice as he was some decades ago. He sings more forced now than he did in his youth. That's normal because the voice loses some range when you get older.
No Insult here, just things that affect us all. Or in the words of the Rolling Stones: What a drag it is to get older...

In 75/76 the switched between playing it in B and in G. I can't see the reason why because B obviously works so much better. LYL is the best version of this song IMHO.
