Shepherd's Pie recipe

In honor of Keith's bday my wife and I are going to make Keith's favorite dish for dinner tonight. Does anyone know a good recipe that is similar to how Keith makes his??

Try Blue Lena's site - I think she still has the recipe Keith himself gave on "Ask Keith" or wherever it was.
It's never seemed especially plausible to me but you can adapt it to make sense.

Thanks, bleedingman - that's the one!
And just to make sure I was clear:
I'm not saying Blue Lena got it wrong -
it's just never seemed plausible the way Keith gave it
(especially that butter-to-potato ratio
and the lack of any seasoning in the filling)
but as noted above, you can adapt it to make sense.

Shepherds pie should have minced lamb in it. When using minced beef, it is known as cohot smileyttage pie

Sometimes it has cheese on top. Sometimes it has baked beans in it. Often it has HP Sauce on the side. Sometimes I get all choked up remembering my childhood . . . winking smiley (You also need an uncle to say "there aren't any shepherds in this!" drinking smiley )

Here is my adaptation of Keith's Pie as originally provided by Blue Lena. I have been using this one for some years now. It may be vague for some non-cooking types; for instance, basic knowledge of how to make gravy, etc. Any way here it is:

KEITH RICHARDS SHEPHERDS PIE

3 pounds potatoes, "Tumbling Diced" (1.33 kilos)
5 tablespoon butter
Milk, salt, and pepper to taste
2 pounds minced beef (1 kilos) (Hamburger)
2 large onions, chopped
2 large carrots, GRATED
12 - 16 ounces of beef broth (chicken stock works also)
Flour and Water
* (make sure to have enough deep round glass pie
dishes and don't over fill them)
* (the recipe "might" fit in an 8.5 X 12.5 casserole dish,
but it is supposed to go into deep round glass
pie dishes)
Note: since writing this adaptation I use the latter 8.5 x 12.5
inch casserole dish only.

• Boil the potatoes
• Mash them with the butter, salt, and pepper.
(Add milk for the gloss) and keep mashing
• Fry the chopped meat and onions with salt and pepper
in batches
• Make the gravy with the broth, flour, and water and
add salt and pepper
• Add the meat, onions, carrots, and gravy to the
pan and cook for 10 minutes until it is not too soupy
• Pour the meat into the bottom of the pie dishes, spread
the mashed potatoes on top, and sprinkle with
a little pepper
• Bake the pie at 340 degrees Fahrenheit untill it bubbles in
the center a little, about half an hour or so.
* (let the pie rest before serving)
* (the pie can keep in the fridge, or freezer)

Via a friend I got Keith's recipe, and for a "first time shepherd'er" the result looked like this (tasted really good!):

This was December 15 last year (the night of the PPV in NJ). PK, the bass player in my band, let me break the crust, LOL! smiling smiley

The secret is to cook the filling slowly and for as long as possible. Leave cooking the potatoes until last.

For a shepherd's pie, it has to be lamb. I dice the carrots rather than grate them and also add rosemary and bay leaves. Tomato puree too and a good glug of Worcestershire sauce (Lea & Perrins). I also like to substitute a third of the potatoes with sweet potato and mash them together for the topping. Let the potatoes steam dry before mashing or else your topping will be too sloppy.

It is true that a Shepherds Pie is supposed to be made with lamb, however Keith Richard's Shepherds Pie is made with hamburger. I make Keith's version and the traditional lamb version. Both are good.

Does Keith have a good recipe for Mince and Tatties? My landlady in Scotland used to make it all the time, it was sooo good. Think it was the best I ever had.

Mince and tatties still a staple in Scotland, Bellajane. Very tasty!

You know, I don't think I've had shepherds or cottage pie for years. My mother is a vegetarian and wouldn't cook too many meat dishes during my childhood. I know I've had it before, but can't think when.

More British people should take note of these great British dishes, next time they plan to tuck in to their Indian, Chinese or pizza takeaway.

Keith's recipe tip actually sounds like a good idea, who would have thought? Maybe when all else fails he can have a cooking show on the Food Network, give Bourdain some serious competition, not that he's on FN anymore! >grinning smiley<
