Nick, probably you don't have the right files.
Take these and you'll find there's a relevant differenve between the two versions.

D. Hoffmann only lists one outtake version of Do You Think in his Weissbuch Recording Index. Well, he is not infallible but usually he is correct.

The sound on classic "Claudine" is so different to "Paris Results" !
I need / I'll do another A/B.
Thanks.

Do You Think - I have 3 versions, different times and they all sound the similar to me. They are 6:05, 6:12, 6:19. I'm gonna put on some headphones and listen but I would think the guitar version would be obvious compared to the Pedal steel.

version I is the well-known version. You can find it on classic bootlegs such as "Claudine - accidents will happen"
Version II was released on "Paris Results". It also have a pedal steel. Keith Richards guitar is clearly different.

I think Mick plays the acoustic, Ronnie plays the pedal-steel and Keith plays the electric.

This is the lineup, according to timeisonourside.com. But I'm not sure if there are two acoustics in there?
Line-up:
Drums: Charlie Watts
Bass: Bill Wyman
Acoustic guitars: Keith Richards & Mick Jagger
Electric guitar: Ron Wood
Pedal steel guitar: Ron Wood
Vocals: Mick Jagger
Piano: Ian Stewart

I don't hear 2 acoustic guitars, only one.
I hear Keith on electric guitar, not Ronnie.
But I can be wrong.
And, Dandelion, you are a guitar player, so what do YOU hear ?
