You really can't go wrong with any of the first 5 or 6 Al Green albums, every one is a classic.
Both Bowie albums, Nebraska and Nashville Skyline are all solid additions.
You should have never asked, because you're about to get my list of indespensible records. Bear in mind, these are only the albums I couldn't imagine the world without, not every album I love. I excluded any various Artist compilations (except for in the box set section). I only listed compilations for groups where albums are hard to come by and/or uneven. There's also a ton of songs that I love that don't really belong to albums per se. It's still a pretty long list and I apologize in advance. Here we go:

Dylan-
Blonde On Blonde

Beggars-Exile (including Ya Yas, excluding R & R circus)

Tim Buckley
Look At The Fool

Marvin Gaye-
Let's Get It On

Here, My Dear

Still In Love With you
Gets next To You
Call Me
Let's Stay Together

I'm sure I've left a ton of stuff off here - this was just off the top of my head. I am already prepared for a deluge of "who cares?" posts. Somebody may care, some kid might get turned on to something they wouldn't have otherwise looked at.
Keith Richards did this for me - sent me in country, gospel and reggae directions I might not have gone in. I hope somebody reads this and maybe heads down a road they would have driven right past.
