I've wondered this about the Stones, too. I"m sure we can all agree that the demand and desire exist both on the Stones' end and the fans' end-- but I completely agree with CrosseyedHeart's analysis of the Covid situation (y'all remember that small thing that put the world on pause?) I am optimistic that we're getting much closer to a form of normal in the US

The 70s are waaay before my time, but I know of a few record stores near my area that usually carry a few bootlegs. One in particular-- can't remember the exact name-- had an entire shelving unit filled with Stones records! And about half of it was bootlegs! I picked up an old copy of 'LIVE`R' & '100% Odd Lots' there! I really should try visiting it again soon...

Not sure how much of an improvement we can expect to get, seeing as that the show turns 30 years old this year and I don't believe SNL ever officially released the performances on DVD/digital, we're unfortunately at the mercy of the VHS copies uploaded.
