A question about Gimme Shelter #2 (for the Captain or anybody else...)

Everywhere I've found this track, there is a speed increase at 2:30/2:32.
I think maybe it runs a bit slow before that, and then too fast.
Is there a "fixed" version somewhere?

On CD1 track 7, if Honky Tonk Women is from 9th or 16th March 1969 is Brian Jones playing on this take? Or is this the first take that his part was alledgedly erased from?

I always get confused about the order of recordings for HTW.
