I found a good one for one night, but most likely we will want to visit sites in London in the days beforehand. Is there a better central location for everything, or should I just book a different place for the sightseeing?

It’d be a waste of money to book somewhere different, just to sightsee. The London Underground and bus routes will get you to the touristy spots from your North London lodging.

quite to opposite, I'd say. If you stay a couple of days you'll vist different sites to see in London on different day but you'll will be traveling to the concert venue only once. Thus it makes more sense to look for accommodation in central London and not close to the stadium

I'm sure you've thought of this, but if you haven't, something to consider is the comfort of staying walking distance to the show venue, and instead put your travel efforts into sightseeing when you're not fighting the crowds all jostling for the same train/bus/uber etc.. It's only a personal preference but with my age etc I much prefer leaving the concert and being back in my room quickly.. On non-show days I enjoy longer walks, trains, plenty of Ubers etc when I can relax
