I would say that that clip shows exactly how Keith IS playing what you hear.
Also, I find it hard to believe that someone under the stage can follow what the band is doing.
Also, both Keith's and Ronnie's guitar parts aren't that hard to play in the first place, plus, Keith's style is too idiosyncratic to be copied succesfully by other players.
Finally, there is a reason why they have so many extras onstage (where many other bands would probably use backing tapes for choruses and other, non-standard instrumental parts): because -in their own words- they would have to work so much harder to play the songs without them.
Now, this doesn't mean that they don't overdub stuff on concert releases, of course. One strange instance is Under My Thumb on The Biggest Bang dvd: you hear the guitar motiff when Keith isn't playing his cream coloured strat at all and it certainly doesn't sound like Keith (or maybe it's a keyboard or some loop kind of thingy?). And what to think of 'Ronnie's' guitar part on Can't You Hear Me Knocking off the Live Licks cd?
