With the Stones in the studio, maybe "Moonlight Mile". A nice demonstration of his vocal range.

Solo stuff? I've always loved his vocals on "Think" from "Wandering Spirit". His phrasing is killer, with lots of creative changes and power.

Think is a cover. Most of the phrasing was already written.

He's not a great singer, but he has a distinctive voice and has worked very hard over the years at his craft. I would say he has had some great vocal performances.
(Well, he has had periods of mailing it in, but there's another post for that.)
I think the IORR and B&B period he was at his best technically. I believe he was getting coached at that time.
Live, he was great in those late '60s European tours and in 1969. When the stages and venues got bigger, he started running around and shouting instead of singing. this last tour he's been better because he's bee forced to stand and sing the damn song.
He was very good on Exile. Him and Keith harmonized quite a bit and I suspect Keith helped him select the right melody.
I think Keith actually is a better singer, but never had a powerful voice and didn't take care of it. But on something like You Got the Silver, Keith brings an emotional commitment to the song that Mick can't do. But Mick is great on songs with more irony.

The soul covers tracks on OUT OF OUR HEADS like "That's How Strong My Love Is" and "Cry To Me" have amazing vocal performances from him too too. He sings with power and gives all that he has, which make these great covers.
