I try to pay attention to it when I listen to Chuck Berry or Muddy Waters or the Stones, but I don't hear what they mean. I can hear that it grooves, but I can't hear why.

this may help...
when counting during a measure that is in regular time (4/4)
Keith mentioned old upright players who played four to the bar, it would count this way:
one and two and three and four..but, the player would play mostly only on the
'one'...'two'... 'three'.. 'four'.. not on the 'and' beats..
in eight to the bar, they are dealing with the 'and' beats..
one - and - two - and - three - and - four..
where it becomes interesting is when you play a bit of both..
