Off the top of my head (based on original post):
A) The Stones Love In Vain over Robert Johnsons original.
A') I'd pick Buddy's version of Not Fade Away over the Stones studio cut. I did love it when they opened with it live though and would probably put that version above Buddy's.
Southside Johnny's version of The Fever tops Bruce's in my mind.
C) I'd pick Bob's version of Like a Rolling Stone over the other two. HOWEVER, I'd pick Jimi's version of All Along the Watchtower over Bob's.

Additional:
I prefer Keith & the Winos version(s) of Something Else better than Eddie Cochran's. (Damn I feel dirty after typing that).
A couple of Live J Geils Band covers, Homework & First I Look At The Purse may not actually "outperform" the original, but I do like them better. Also, Peter Wolf rerecorded Homework solo and that may be my favorite of the bunch.
Would it be blasphemous to prefer Israel Kamakawiwo'ole's version of Over the Rainbow to Judy Garland's?

I'm sure I'll think of more but that's enough for now!

Well, the other night I had a real lot of examples on my mind, but these days I have the flu and nothing comes to my mind easy.

I relistened to Jimi's Like A Rolling Stone and was amazed by the lightness and ease he treats the guitar with and the the lyrics leave his mouth.

bob dylan's version of "Like a rolling stone" is the best version there is - that's my vote. the stones' version doesn't hold a candle to it.

"roll over beethoven" and "rock-n-roll music" by the beatles are arguably as good or better than the CB versions.
