The lyric about keep on " rolling" has adds to making me think its a great song as well.

2. Jumpin' Jack Flash
3. Brown Sugar
4. Honky Tonk Women
5. Start Me Up (for better or for worse)
6. Gimme Shelter
7. Sympathy For The Devil
8. Tumbling Dice
9. Paint It Black
10. It's Only Rock 'N Roll (But I Like It)
To me, those are the 10 songs that define the Stones. Yeah, they happen to be their hits, but I believe those 10 kind of cover most of the bases that make up the Stones. Angry, dirty, bluesy, and rocking.
To a lesser extent, I also think Street Fighting Man, Midnight Rambler, You Can't Always Get What You Want, and Miss You (again, for better or for worse) are also quintessential.
I don't know if you can narrow it down to one song, but if I did it might have to be Brown Sugar.
