high praise indeed
I pretty much agree. This has nothing to do with what song we like the most (give me a live version of Midnight Rambler anyday), but if we walk up to a typical rock n roll fan and ask them what song most definds the Stones, I think Satisfaction would place first followed by JJF and so on....
If I were asked to choose a single Stones song, that would be my choice.

Quintessential Stones Song

Nothing much to do since the end of 14 on fire. I was listening to Tumbling Dice, original studio, rehearsal and live versions. For me it captures the essence of the Stone. A mixture of blues, country, chuck berry, and soul. I especially find the Brussell's version to be the absolute best live version I have ever heard. The latter day versions are sort of flat but still enjoyable IMHO.

Quintessential Stones songs, for me, are:
1. Satisfaction
2. Jumpin' Jack Flash
3. Brown Sugar
4. Honky Tonk Women
5. Start Me Up (for better or for worse)
6. Gimme Shelter
7. Sympathy For The Devil
8. Tumbling Dice
9. Paint It Black
10. It's Only Rock 'N Roll (But I Like It)
To me, those are the 10 songs that define the Stones. Yeah, they happen to be their hits, but I believe those 10 kind of cover most of the bases that make up the Stones. Angry, dirty, bluesy, and rocking.
To a lesser extent, I also think Street Fighting Man, Midnight Rambler, You Can't Always Get What You Want, and Miss You (again, for better or for worse) are also quintessential.
I don't know if you can narrow it down to one song, but if I did it might have to be Brown Sugar.

You're not far wrong with that choice PhillyFAN. It's got pop, rock, soul, gospel and an outro to die for. There are better songs in the Stones canon but this one pretty much captures what they are all about - or at least have been for much of their career.

The lyric about keep on " rolling" has adds to making me think its a great song as well.

There are many. ' Exile ' is a good place to look. Half of its tracks can be considered that way.
I agree that the Brussels '73 version of Tumbling Dice might be the best live version of the song but,also consider the one from Detroit in '78. I think that the '90's versions were better than the '80's versions but,I also agree that it has become flat lately. For this past decade,the version from Argentina in 2006 might have been the best Tumbling Dice of recent times.

for me there are 3 songs which together would define a large portion of the stones catalogue and should have been the only 3 songs performed every gig(the rest should have been rotated between gigs)

Great choices! Almost their standard set list! It is difficult to boil down to one song tho'. Now that the touring is finished things have gotten a little blue (boring). So chatting with fellow Stones folk is wonderful!

Like the choices in the initial post. But you see how difficult it is, as everyone has a different view of what a 'quintessential' Stones song is.
I like that someone mentioned 'Midnight Rambler.' I'd include 'Wild Horses' and 'Street Fighting Man,' but those are two of my personal favorites.

I know there are the songs that they are known for and then the songs that should be known. In regard to sticking to what quintessential means and of which it must include more than just the straight and narrow, I've never been convinced that Satisfaction or Paint It Black and a few others have been the perfect embodiment of what the Stones are. After all, they never did anything like those songs again. So those don't necessarily "embody" what the Stones are or sound like strictly in that regard. They may have at the time but what the Stones have become to be known for, the rhythm monster, the licks, the guitar interplay, the riffs, attitude, some nice horns and musicianship (songs in no particular order) looks like this for me, in this condensed form anyway:

3. Can't You Hear Me Knocking
4. Jumpin' Jack Flash

You have to consider both music and lyrics, and across different eras of the Stones. Would the Stones who recorded 'Satisfaction' (with Brian Jones) do well to record a song like 'Slave?'

It's by far their most well-known track, and it will unarguably go down in history as one of the few songs which changed music forever, along with Bob Dylan's "Like a Rolling Stone" and Chuck Berry's "Johnny B Goode". It's hard to imagine what music would be like today had Satisfaction never been written. It really was a turning point in musical history, and I'm sure it will be remembered as being one one centuries to come. Just like we remember Mozart and Beethoven today, future generations will remember the Stones for their massive contribution to music with Satisfaction.

I'd give Love Is Strong a mention, not because it's their best song but it is quintessential Stones and one of their best post 80s songs. Also, Stray Cat Blues in its own way.
