The set lists from 69-73 are the best from when they were still a relevant music making band. Also the 75 tour had great set lists and they lengthened the show. The latter day set lists from the Licks tour were awesome and also Brixton and paradiso from 1995 and El Mocambo.

I would go for the Nicaraguan Benefit show - essentially the 72 setlist, plus a few from '69 (Live with Me and Stray Cat Blues) and a few one offs like Rt 66.
Of the more recent tours, I always liked the club shows from the Licks tour, like the Roseland show mentioned earlier.
Of the shows I've attended, the Houston show on the Licks tour had a good mixture of songs, many which I heard for the first time live - Monkey Man, If you can't rock me, Little Red Rooster, CYHMK.
