Well, if it was Brian so be it, I'm not trying to insert Jack just for the #$$% of it.
Tis the usual thing of needing loads more proof for a possible Brian contribution being accepted as being a Brian contribution.
Of course, it might have been Jack, but there's kinda slightly better hint that it might have been Brian... we see him playing it soon after it was recorded.

Sounds plausible, but it's never that easy with the Stones.
Why would, for instance, Keith play piano at all on Let's Spend The Night Together?
One answer is that he wrote it on piano, just like with Have You Seen Your Mother. But Jack was the better piano player anyway.
Brian may very well have played the piano on RT, for reasons we don't know. Maybe Keith was busy putting the track together arrangement-wise, and Jack wasn't there - we don't know

The double bass by Bill and Keith is an overdub.
If the recorder is an overdub, Brian could have played the piano on the basic track (along with Keith on acoustic, Bill on bass and Charlie on drums).
We don´t really know...

If we go down the "don't know" path, how do we know Mick is really singing and not a Mick impersonator.
Maybe the cleaner at the studio played bass.
I've read some Brian heads that think it's Brian's genius song and they relegate everyone else to being a sideshow and Brian was playing it all the piano and recorder and it's a wonder that they don't also have Brian playing everything else as well.

It is entirely possible that Jack, Brian, Keith or Stu played that tack piano.

Why would Brian bother to learn Jack's piano part for Ruby Tuesday and then choose out of all the possible things he could have played to play that part when the camera is focused in on him at home in January 1967?
Personally, I think it's very possible that he is proud of Ruby Tuesday and wants the viewer to know he played not only the recorder, but also the main piano.
That he plays it a bit differently and wobbly is no different to him playing his mellotron part for 2000 Light Years from Home etc etc during Satanic Sessions... It's different from take to take.
