Hence, so if I go out to buy audio upgrades, do I go for 1) SHM-SACD as currently sold in Japan, or for 2) HDtracks [...] ?

The best digital versions of the post-Let it Bleed Stones catalogue are indeed the SHM-SACD's from 2011. Those DSD masterings were reportedly done "flat" from the original UK tapes by the people at FX Mastering.
The new Platinum SHM-CD's use those 2011 DSD masterings, and they sound virtually as good. All other SHM-CD's do NOT use those 2011 masterings, and won't sound very different from what you buy in the US/Europe.
They are all outstanding, in my opinion.

A little confused here.
Are there 'flat' transfers of the 1971-1986 catalog on cd's outside Japan???

If these things continue to improve...
...they might one day sound nearly as good as the record
