“They are rooted in the blues. When they are writing stuff, it has to do with the blues,”
He says this like it’s a bad thing... And it’s just plain wrong.
Poor Paul. Same lines every night, same stories, same high on the mount.
It might surprise him that for some, the Beatles don’t exist and it’s only ever been the stones that mattered.

I have a friend that gets so mad he won't talk to me when I try to say something about The Beatles.

Since John is not there anymore to discuss Paul's view.
Remember John hated jazz stuff.
Paul liked jazz stuff.
But both loved Rock 'N' Roll.
And the Beatles were a mixture of that.
Paul wrote "Oh Darling" and John would have died to be allowed to sing it.
Beatles and Stones rivalery is just a joke.

"I'm not sure I should say it, but they're a blues cover band, that's sort of what the Stones are"

Dear Paul, with these words you have been disrespectful and you have shown that you don't understand a @#$%& thing about a truly eclectic band that has played - unlike you - every musical genre. And unlike you, they have never bored anyone.

It's a joke but he can't say that the Stones "are a blues cover band".
It means Paul hasn't listened to their albums...or just Blue and Lonesome!

This is an article by David Remnick of The New Yorker. There is also a video of Resnick with CNN.
The comments by Paul seem a little insulting. The Stones have covered quite a few old blues musicians, and their music was influenced by the great blues people. But they sang romantic ballads, dabbled in disco, and wrote some wild and raucous rock and roll. Many dealt with important social issues.
This is 2021. Isn't it a bit silly to go into the debate about which is better, Stones or Beatles ?
