One that stands out for me is in Coming Down Again where Mick comes in and sky falls down again. That is such a beautiful and touching songs I also love the sax solo in that song.
The tremolo guitar at the start of Gimme Shelter gives the song an aura of doom.
The little yeah at the end of Brown Sugar.

You mentioned Undercover, I love that song. There is something going on with that song underneath the main rhythm, It's almost like the song is layered on top of another song or something. I just can't put my finger on it.
