Exile on Main Street gets my vote, but I will also mention the Minutemen's Double Nickles on the Dime (1984).

blonde on blonde, yellow brick road, all things must pass (3 lps), songs in the key of life....all worthy of consideration.....

Compilation-wise, you can't go too far wrong with Eric Clapton's 'History'. A double long player and the first career-retrospective of it's kind.

Wheels Of Fire - Cream - period

One song pours into the other like rain, the ultimate last word in rock operas, iconic enough to inspire the Mod revival of the late 70s as well as a decent enough motion picture, and well worth the price of a concert ticket to see played live from start to finish. Production-wise, Quadrophenia was so far ahead of its time that it couldn't even receive a decent live treatment until decades later. As far as album tours go, what other band has toured with a double-album show?
